Had never realized that there was a cavity between the two sides that they used for insulation. Neat!

Yeah, basic concept is you end up with two separate masonry walls with a thermal break in the middle since the wood is not a efficient thermal conductor. Rob roy originally experimented with fiberglass batts for the insulation but found the treated sawdust to work much better and cheaper.
