My stepdaughter was vegetarian for about 5 years and we tried a bunch of different dishes.  I even rolled it out with a rolling pin, cut it into strips and grilled it, then basted with BBQ sauce.

We used this cookbook a ton, I still make the veggie burgers

my friend lent me 2 vegan books with really nice recipes.

Street Vegan, with recipes from an award winning NYC foodtruck

Isa does It, from one of the authors of Ash's book.

 

I find it nice to have new sources of protein and just mix it up

I took my stepdaughter, who was interested in veterinarian medicine, to "Small Animal Days" put on by Michigan State and she decided she wanted to help animals not eat them.

She was vegetarian from age 9-14 and then she decided she was tired of having to make her own meals on meat days.  It was good for us, though.  We tried new foods, ate more vegetables and fish (she was pescatarian) and explored my wife's side of the family's arab culinary heritage.
