Been making this a lot lately, good for low carbers and non alike

Go to walmart, they discount the rotisserie chicken from the previous day to 4.99, we go through several a week.

Pick up the large container of baby spinach for 4 bucks and a roma tomato.

Throw the spinach in a saute pan, add 1/2 cup heavy cream and when the spinach is half way wilted kill the heat and stir in a cup of ricotta.

Pick the meat off the chicken and lay it in the bottom of a casserole pan, pour the spinach mixture over top, garnish with the roma tomato, parm cheese, garlic, salt pepper to taste.

I like to throw some jalapenos on as well.

Bake at 350 for an hour. Split into 4 plates and garnish each serving with a tablespoon of sour cream.Β  If you are going low carb each portion is 570 calories, 6 net carbs, 3 grams of sugar. Easily feeds 4 for about 3 bucks a serving. I usually eat half the dish and have a light breakfast to hit my macros.

looks great! I do something similar but I slice and stuff the breasts with the spinach and ricotta... then wrap the whole thing in bacn before it goes into the oven πŸ™‚

it's good. If you have something like a wire rack you can put over the pan and put the chicken on that, the bacon gets crispier beciause the grease can drain away
