I know there was a thread at some point about what we were producing but I can't find it!

I have been freezing at the moment. I know in the long run it uses more energy, but it is much easier for me to fit it into my time frame right now.

I have a months worth of greens! Last year because of the extreme rain, my greens did poorly and I hardly had any put away for the winter. I missed having greens.

So I've frozen collards, chard, lambs quarter and nettles.

The beans are coming in and I have several packages of them already.

Since I am alone I am doing everything in quart sizes rather than gallons

I think that was the food production 2013 thread, wow, you have been busy, how much freezer space do you have? Do you do any dehydrating at all?

how is the chard after freezing?

You just freeze it or you do some preparation before?

I have two chest freezers. I don't have a dehydrator nor do I have a pilot on my oven so I freeze and can. Mostly freeze right now because it takes less time. I know it takes more energy in theong run but time is my issue right niw

I blanch all if my greens before freezing. I seperated the stems from the leaves as the stems need to blanch longer but I combine them again for the freezer. Chard is secellent this way.
