when i smoke big pieces of meat, i always end by foiling it, wrapping it in towel and putting it in a cooler (with no ice obviously).
It continues to cook while starting the resting process.
I smoked some ribs this weekend, and i left them for 2 hours after taking them out of the smoker and they were still too hot to handle.
