I am in the process of revamping my off-grid system for my perrmanent cabin and I will be building a portable solar power trailer that will hold aprox. 500 watts of solar panels and my small genny which is enough to power my cabin and provide 3 days of storage capacity.
I think this would be a good project for off-gridders, vacation cabins, long term campers, survival retreats, and as an emergency backup power system for an on-grid home.
Here are my plans so far and any feedback appreciated:

Please tell us how 41 amps powers your cabin for 3 days. What powers the refrigerator? How do you stay cool in this 90 degree weather? How many amps does your internet connection use per day? I am not being hostile, I am living under similar conditions. I have donated money to you before.

Sounds like you know what you are doing with solar so my only suggestions would be to use AGM batteries because they are sealed and would take road vibrations better and to take a look at some of the newer 400+ watt solar panels coming out. You might be able to just use one panel which limits the connections you would need, mounting points, etc.
