Have you guys ever seen these grain bin conversions? There are a few on my local Craigslist and this is making me think it could be a good way to do an addition. Per this link, insulate with straw bales, coat the walls in plaster, etc. Lots of living space for cheap with a unique look. The one linked below isn't finished very well, but the concept is there.
