Drywall is one of those things that looks easy and is very easy to screw up, I hate drywall, but here is a great tutorial on it.

For me, hanging it is the easy part.

The hard part is floating it. I just can't leave the mud alone after I get it on there. I keep trying to get it a little smoother...a little smoother...just let me fix this one spot...until it's completely crappy and I might as well start over.

lol true, my biggest issue when first starting was trying to use every piece, 3x3 scrap? I can use that, no factory edge? Pfft watch me, 2 days later, rip it down
