We use rain water, and have Berkey filters for drinking and cooking water.

I can't praise the Berkey company and the quality of their filters enough. I even have a small one that I carry with me when I travel.

I talked to a plumber buddy of mine the other day about adding tanks before the H2O heater. He thought it was a good idea. He suggested calling the company who makes the barrels to see if they are pressure rated and to make sure they are food grade. check to see what the bung caps are rated for also. He said it would have to be a DIY project, It would not meet local codes. To offer this service to customers the tanks would have to be certified storage tanks(expensive).

Hell I think a few hot water heaters without the electric or gas hooked up would be good. They are intended to hold water and already have the pipe connections and a drain.

I may give this a try when I get finished encapsulating my crawl space.

that was my initial thought as well was a couple of burned out hot water tanks in series
