Last January I had made a batch of pineapple wine and had totally forgotten about it. It sat neglected for the next 8 months. My wife kept asking me when we were going to bottle it and I kept pushing it off.

Finally at the end of summer as we were canning and dehydrating some food, I had my eureka moment. We dehydrate a lot of our vegetables and vacuum seal them in extra canning jars with the food saver attachment.

 So I'm sitting there looking at some green peppers we had vacuum sealed

and thought to myself, why not just can it instead of worrying about cleaning and sanitizing bottles. Besides, we once had a bad experience with a corked bottle of wine that wasn't quite done fermenting.

So we grabbed our food saver, a carboy full of wine, a case of quart jars and went to town. It was kind of neat to watch the vacuum sealer pull any residual carbonation out of the wine.

It literally took only about 15 minutes to can up 5 gallons of wine. A extra added benefit is everything in the process is reusable including the lids.

for those trying to be off grid, you can always make your own vacuum sealer with a brake bleeder

as long as fermentation is done, it really works great
