INGREDIENTS
- For the thai dressing:
- 3 tablespoons soy sauce
- 3 tablespoons sesame oil
- 1 tablespoon fish sauce
- 1 tablespoon honey
- 1 garlic clove, crushed
- 1 tablespoon chili flakes
- 1 lime, juiced
- 1 large cucumber
- 1 large carrot
- 2 chicken breasts, shredded
- 3-4 spring onions
- Bunch of coriander
- Bunch of mint
- Crushed peanuts (to serve)
INSTRUCTIONS
- In a small bowl, whisk together the Thai dressing ingredients. Set aside.
- As a substitute for noodles, use a vegetable peeler to peel long ribbons of cucumber and carrot. (You can use a spiralizer if you prefer).
- Using scissors, snip in the spring onion, coriander, and mint. Add shredded chicken (or any meat you prefer).
- Pour over the Thai dressing and toss.
- Serve with crushed peanuts.
