I've made this a couple of times using beef, and once using pork loin, and venison loin.  

One thing I discovered is to dock the inside of the puff pastry so it doesn't rise too much.  You end up with an oversize pig-in-a-blanket.

my wife watches all the gordon ramsay cooking shows, master chef, hells kitchen, kitchen nightmares, etc.

We've been dying to have beef wellington.

Will have to give it a try one of these days.
