Well I went to Fred Meyers and picked up a little chief for 100 bucks. Soaked my Salmon in brine for 19 hours and rinsed it off. Let it sit(the fish) for an hour outside to let it dry and just started smoking it. Things that I have learned so far is that i need a sharper knife and need to find out if there is a way to debone the fish.
