I just lost an entire post so heres the compact version, lol. This year I feel the need to squirrel away all the food I can. Just one of those feelings you get sometimes...  I am growing, buying from folks I trust, and trading.

So far I just canned 25 qts tomatoes, 21 qts of tomato, green pepper and onion mix, 9 qts green beans. I blanched, vacuum packed, froze 8 dozen ears of corn, chopped and froze a bushel of green peppers, and made 30 lbs of green tomato kraut. I know I will be short on green beans this year because I didnt have enough raised beds to plant the amount we needed. They are selling for $40.00 a bushel this year and I refuse to pay that! I have potatoes and carrots still in the ground. I'll be planting Fall crops soon, turnips, more peas and carrots again. May plant more of the Russian Red Kale which was really good stuff!  I have a patch of Sweet potatoes still growing, need to dig the garlic. The Okra was a total bust due to planting too early for here and stunting the roots. I have a boat load of hot Spanish peppers ready to pick, some Tomatillas, and am getting enough cukes and squash to eat fresh.

very nice, hopefully our fruit harvest will be good this year and will have a bunch of stuff this fall, still hoping to get a fall garden in if I can get this yard finished

Boy do I envy your fruit! I have apple trees in the ground and thought they'd produce this year but nope, no apples. It may have been the late frost that got them or else they just arent mature enough yet. Fruit will have to be bought for at least one more year. Always something. Make sure you post pics of your harvest for all to see.

I'd probably dehydrate some or make some plum butter. Maybe fruit leather?

I have 5 gallons of pear and 5 gallons of strawberry sitting in carboys from almost 3 years ago, I need to get them bottled up,maybe I'll do that this weekend
