Lee makes a good one in the crockpot. Mine would be Mexican chili. Which she also has a good recipe for.

Beef soup

We butcher our own so I always have lots of shank.

Beef shank in a large pot of water

add carrots, onions, celery, parsnips and 1 can stewed tomatoes.

When vegetables are tender and meat is fall off the bone done remove shank and take meat off bone. Keep meat on the side. Strain most of the vegetable through a sieve, makes it nice and thick. add veggies and meat back. serve with some rice and a sprinkle of Parmesan cheese.
