What do you know about beans?

Looking to store up some dry beans.  I have no idea what kind to store.  Will probably do the Costco bulk purchase.

What kind cook up fairly easy, store long term, and can be used in a variety of dishes?...if possible would like to avoid the types that need to soak over night...but, maybe there is no way around that?

If you got a few ideas please share.

We use yellow eye beans, I have an aversion for kidney beans since I almost died from them as a kid.

Don't eat kidney beans raw kids, they are not peanuts!

You are going to have to let them soak, we find it easier to just do big batches at a time and then pressure can them so they are ready to go.

My buddy started a gentleman's farm as he likes to call it and has been getting pretty serious with beans, he is selling quite a lot but it's a one man job and he does everything by hand, this is his bean sorting table he made.

K, very nice to have a set up like that!

I think we are going to re-look at what is available and experiment with 'small' bags first, then make a larger purchase when we have it figured out for us.

So, the great Bean experiment starts this weekend at my house...not sure I want the consequence's though.

What are you going to do with them, vacuum sealing them in canning jars works great for them as well

We've done a variety of different types of dry beans; pinto, navy, tiger eye... When we soak them, we go ahead and cook them down and freeze them in freezer bags (6 or so at a time) so they are ready to go. We've never had issues doing it that way.

Going to break them down and do mylar bags with 02 absorbers.
