I have been making it so long I don't use books anymore...I was fortunate to be taught wine making a few decades ago by a few old Italian guys. 

The biggest thing I have learned is to use yeast when you start your wine...nothing compares to store bought yeast for wine/champagne.  Most wine that sucks is from one of two reasons: 1, the guy had no idea what he was doing or 2, more likely relied (knowingly or unknowingly) relied on wild yeast.  Learning about yeast is complex. The vintners at Cornell readily admit that they know very little about wine yeasts...and they are the ones that write the books.

My wines were always good.  When I started using wine yeasts they became very good.  I even have an award or two for some of my old stuff.

...and yes, it is okay to use champagne yeast in wine production...for white wines the champagne yeasts make it even better in my opinion.

I always end up using champagne, seems it is the only thing in stock whenever I hit up the store, the natural living center stores up here is the only place we can get wine and beer making supplies, unless I order online

what's your guys favorite recipe book? I use this all the time, there is a couple in there I am afraid to try.

I have the same book, K.  We've been making wine with a big group of friends at a winemaking place for about 8 years now.  We usually do two batches a year.  Californian in the summer and Chilean in the winter.  We go there on four separate appointments, one each for destemming, crushing, racking and bottling.  The facility has all the equipment and stores our barrel for us in their warehouse.  They pretty much do all the testing and adjustments for us as it ages.  It's been pretty informative and I've learned enough that now I can probably get started doing this at home.  I've been keeping my eye out to see when equipment goes on sale or becomes available on Craigslist, but I havent pulled the trigger on anything yet.
