This is my first addition to the forum so bear with me.. So I was recently in Arkansas with my family and my brother and I came across pork butt for .89 a pound! So just like any other person we bought 50lbs! My brother just recently made a reverse osmosis smoker for a friend of his and with the leftover metal we had to make one! After some fun and some beer we finally made the smoker and were off to the races. Then once we had the pork in the smoker he said "Its time to make some mop sauce!" I gave him an odd look, and wondered what the world he meant. I was happy to find out! If you don't know what mop sauce is heres a quick explanation. Glazing with barbecue sauce in the last few minutes adds fast flavor, mop sauces are best for flavoring tough meats you’re going to be cooking for long periods of time. Thinner than barbecue sauces, mop sauces are typically made from beer, vinegar or apple cider, and are basted onto the meat every 20 minutes using a small mop or brush, ensuring maximum flavor infusion throughout the cooking process. This recipe he uses is great for pulled pork sandwiches even on your breakfast food, its amazing. So with all that aside here it is!

Alright,

2 Tbs of packed brown sugar

1 Tbs of paprika

1 Tbs of chili powder

1 1/2 Tsp ground cumin

1 Tsp of salt

1/4 Tsp of cayenne pepper

Fresh ground pepper to taste

1/3 Cup of ketchup

1/4 Cup of cider vinegar

2 Tbs of molasses

2 Tsp Worcestershire sauce

Mix up all the ingredients into a bowl mix thoroughly and you have it!

My brother and I added a little bit of our favorite hot sauce but that's up to you!!

It has a little bit of a bite but nothing that will kill you. Thats why my brother and I added some spice!
