So my wife had picked a roast from a local farm, we still had some onions and carrots left over in the pantry so we decided to make a pot roast for supper, well what goes well with pot roast? Horseradish of course!
So I went out into the yard to find some horseradish
my dog helped me find it and with clearing away the snow
the ground was still little frozen, but we chipped away the soil
and cut a piece of root off, once the soil thaws out more I will dig the rest of that up
looks like a alien
so I peeled it and cleaned it up
and grated it up
I grabbed some vinegar
and mixed some of it in
Dinner was ready
it was outstanding
if you love horseradish like I do, plant some, very simple to do, be careful though, it can be invasive, need to make sure you are harvesting and cutting it back, this could easily be canned for the fridge and will last several months in there
