some people don't like homemade bread, they say it is to heavy, to dense, etc, well here is how to get around that

take a cup of warm water

add 2 tablespoons of yeast and 1 of sugar and stir and let rest for 5 minutes to activate the yeast

add 5 cups of bread flour, 2 tablespoons of sugar and 1 tablespoon of salt into a mixing bowl

after 5 minutes the yeast has activated, add that into the bowl of flour

melt 2 tablespoons of butter and dump that into the flour

measure out a cup of milk and dump that into the flour

stir well into a clump

and proceed to knead for 10 minutes, flouring as need if sticky

oil the bowl cover with a towel and let it proof

after about a hour it will double in size

flour your cutting board and dump the dough out

cut it in half

form two dough balls

and let them rest for 10 minutes

punch the dough down into a rectangle

fold 1/3rd over

and the other 1/3rd over that

pinch the seam shut

fold the dough in half

and pinch it shut, the purpose is to stretch the dough so it rises uniformly and keep it's shape

oil a breadpan, and set the dough seam side down

I set the pans by the woodstove to proof for a hour

the dough is rising above the breadpan

take a knife and score the top

bake in the oven for about 35 minuts at 375

perfect golden bottom

with a nice crust and soft middle

so I assembled some farm cheese, cream cheese, some butter I made and the bread

I put some cream cheese in a bowl

the cream cheese would be to soft and the farm cheese doesn't melt, so I grated some farm cheese into the cream cheese

and mixed it well, making a stiff cheese spread

I sliced off four pieces of bread

and buttered them up

I flipped two pieces over and applied the spread

and popped the other two on top

I heated up a griddle and set them on
