We have mushrooms growing all around us. I think they are "Chicken of the Woods". I am skeptical to eat them until I have a local tell me they are safe.

A substitute for chicken meat in cooking:

chicken of the woods is good stuff! We have it around here and try aad eat it whenever we can find it. It's pretty tasty, and has a fleshy texture, thus the meat substitute bit. There is an imposter that looks very similar, I think it's called a jack-o-lantern or something. Basically the way to check if you have a legit chicken of the woods and not the imposter is to make sure it has pores on the underside and not gills. Pores good, gills bad. If you really want to do some serious identification, get yourself a book on mushrooms in your region and double check all the details. Enjoy!

Mushrooms in a basket are a good idea. I saw this today at Safeway for 17 bucks, I'm tempted to try one out.
