So we made fajitas the other night and had some left overs, so I decided to make a simple carbonara with it, we had about a pound of diced chicken, some peppers and onions, I grabbed 4 oz of diced bacon, 4 eggs, a bag of egg noodles, a lemon, some butter and a cup of white wine
I put a couple ounces of butter and the peppers and onions in a pan
and added the bacon and chicken and started rendering it down
I got the egg noodles boiling
and squeezed the lemon into the chicken
and poured in the cup of wine
and let them simmer
once the egg noodles were done, I drained them
and dumped the chicken mixture into the noodles
I added the 4 eggs
and mixed it in well
and added a cup of parmesan and mixed it in
Dinner is served
it was awesome, it's not a true carbonara because I used bacon instead of pancetta, but close enough
