I didnt have the sound when I watched this, so I dont know if its mentioned....

Could you freeze this stuff?

apparently the gold standard is raw cows milk, this girls butter looks delicious.

yep it can be frozen, here is a pound of raw milk butter rinkus gave us when we were out at his house last weekend

here is his milking room, all the eggs in the back basket was one days collections, the two plastic jugs sitting on the table is what they make their butter in

so I was bored yesterday and decided to try my hand at making butter, I grabbed a mason jar and a quart of heavy cream

and started filling up the jar

this was my first mistake, I filled the jar all the way to the top, I forgot it was suppose to be half to two thirds full

so I screwed on the lid

and started shaking, I quickly realized my error and had to dump some out because the jar was to full, after getting the correct amount I kept shaking and I could see it start to seperate

fresh home made butter

I dumped it into a colander and rinsed it off with cold water

I grabbed a piece of wax paper

and dumped the butter on the paper

I patted it dry and wrapped it up

I decided to do another batch to see how fast I could make it, so I grabbed some more cream and only filled the jar half way

screwed the lid down and started shaking

it quickly doubled in size

it really thickens up and takes the consistency of sour cream

It's pretty cool to see when it separates, literally within 10 seconds it goes from a thick consistency to butter and buttermilk

this time instead of draining in a colander I just ran cold water into the jar till it came out clean and wrapped it in wax paper, it took 16 minutes start to finish, I might try that cheese today

My wife makes butter with her kitchenaid mixer a lot, I'll have to show her this method.
