not sharp at all, very mild. Have you ever had paneer? That's basically what it is.

I finally found a source that will deliver raw milk to my area.

Cant wait to try with raw milk instead of store bought!

nah, I'm kind of sheltered (and picky).  I have very little experience with fromage outside of American and Cheddar (and the occasional Port Wine).

think mild like amercian but firm, it doesn't melt, good for meat substitutions in stir frys and other recipes, also good for slicing and serving with crackers and pepperoni
