A friend hooked me up with some beef that was cut to make jerky, so I slap dashed together a marinade, soy, Worcestershire, chili powder, garlic, onion, salt, pepper, brown sugar, honey. Didn't measure a thing. Spent several hours in the dehydrator and then finished with an hour in the smoker, and it is effing incredible. Now I really wish I had written down that marinade recipe.
I wish I had kvr's discipline in organizing and documenting.
