so i decided to make some more cheese yesterday, but I was all out of milk, so i made the gauntlet run out to the farm again, by now the ice had melted and the roads were turning into mud runs, rinkus told me to stop being a sally, his wife drives out there everyday
so when I got home I threw some raw milk in a jar
and started shaking, after 15 minutes I had some good seperation
I took my hacked cheese cloth and draped it into another mason jar
I slowly poured the butter jar into the sitting jar and strained out the butter
I ran some cold water over the butter and wrapped it up and stuck it into the fridge
I put a lid on the buttermilk and stuck that into the fridge to make some buttermlk biscuits with tomorrow
and grabbed my ingredients to make my dough
In a mixing bowl I dumped 3 cups of flour, 3/4 cups of oats, 2 tablespoons of yeast and 1.5 teaspoons of salt
and mixed it well
at the same time I had milk on to make cheese
so i grabbed a cup of warm milk out of the pot
and dumped the fresh butter into it
I stirred for a few minutes to melt the butter
and then stirred in a 1/4 cup of warm water and a 1/4 cup of honey
I dumped the milk mixture into the dry mix
I mixed for a couple minutes until the dough started to stiffen up
and started kneading the dough in the bowl for 10 minutes
the cheese had finished boiling so I set the dough on the pot to proof
remember I said how big the curds were with raw milk? The cheese came out in one big lump
after letting the dough proof for a little over a hour, it had doubled in size
so I dumped it onto a cutting board
using the bread pan as a guide, I formed a 9x12 rectangle, my daughter wasn't fast enough!
I rolled the dough up into a loaf, tucking the ends as I went
and oiled up the bread pan and set the dough into the pan
the pan set perfectly into the pan and I covered it with a towel to proof for another hour
I pulled the pan off
and set a pan with a couple inches of water on the bottom rack and started preheating the oven to 350
I brushed the dough with honey and sprinkled it with oats
and baked it for 45 minutes
it was awesome
