For low carbers, substituting low sugar ketchup, almond flour and crushed pork rinds should work
INGREDIENTS
- 8 thinly-sliced pork
- 4 slices prosciutto
- 2 eggs
- 1/2 red bell pepper
- 4 asparagus spears
- 30 g cheese sticks
- salt
- pepper
- panko bread crumbs
- flour
- 1 egg, whisked
- cooking oil
- for the sauce
- 2 tbsp ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp red wine
INSTRUCTIONS
- Boil eggs and set aside. Lightly boil asparagus and red bell peppers and cut so that it’s the same length as the eggs. Mix together ingredients for the sauce and microwave for 1 minute and set aside.
- Place two slices of pork next to each other. Put a slice of prosciutto in the middle.
- Top with bell pepper, asparagus, cheese and half a boiled egg.
- Season with salt and pepper and roll it up tightly.
- Coat with flour and then dip into the whisked egg. Finally coat well with panko. Deep-fry until golden brown.
- Slice in half and serve with sauce.
