I'm under the impression that Wellington is extremely difficult to prepare.  When I used to watch Hell's Kitchen, Ramsey was ALWAYS complaining about the "bloody wellington".  (not bloody as in underdone, but as a British exclamation)

It was always the wellington and the damned risotto.  I think the risotto was always a little worse.

I've always wanted to try it, mainly because of HK.  I assume, that he expects perfection and it's a fine line.  A minute or two either way and it's overcooked or under cooked.

When I made that comment, I was drawing a blank on risotto and had to ask my wife.  "What was Ramsey always complaining about on Hell's Kitchen???"

Her response: "The Wellington??  Or the risotto??"
