I've always wanted to try it, mainly because of HK. I assume, that he expects perfection and it's a fine line. A minute or two either way and it's overcooked or under cooked.
When I made that comment, I was drawing a blank on risotto and had to ask my wife. "What was Ramsey always complaining about on Hell's Kitchen???"
Her response: "The Wellington?? Or the risotto??"
