Cracked 10 eggs into a bowl and added some spinach,mushrooms,cilantro, half a habanero. Added some spices, Cayenne pepper,Kosher salt,Black pepper.
Poured into muffin pan trying to evenly distribute the mushrooms. Sprinkled some cheese on top.
Put in the oven at 375 for about 25 minutes. When I looked they were ballooned up and touching with a nice brown crisp on the top. Pulled them out and set them on the oven to cool, when I came back they were all deflated and sad looking.
Ended up looking nothing like a muffin but they tasted great
