Yea I have smoked about 6 times so far. Each time it tends to get better. Sometimes I start to late in the day and end up tossing it in the oven to finish it. Still keeps a great smoky flavor. So far my favorite is when I use Apple wood chips and put honey and brown sugar over it. You smoked anything lately?

never commented on that smoker K, sweet setup bro! I don't think I have ever had smoked fish green, is it good? does it need to be refridgerated after cooking?
Really you have never tried it. Super good and stores about 2-3 weeks depending on how you store it and if you refrigerate it. It is the salt from the brine that keeps it fresh mostly.
