So it has been a long journey since I first discovered KVR's earth sheltered home on a site dedicated to the combat arts. What I can say is that the lifestyle stuck a major cord with me at the time and that understanding and passion has only grown in the following years.
Tonight has marked my first, and surely not last, canning experience. Tomorrow I will put 4 liters of salsa into my previously non-existent pantry. A small step to be sure, but I am just slightly more food secure than I was previously. As land allows an abundant pantry will follow. Our CSA has offered a lot of bulk items lately at great prices so we jumped on 1/2 a bushel of tomatoes, 20 lbs of squash, 10 lbs of garlic and onions each. 1/2 of the tomatoes went into the salsa, the rest will be canned on their own shortly.
I look forward to the day when I have a winter's food supply in the basement! All in all, a great, if labour intensive experience, that I would recommend to everyone. With experience comes efficiency, so I am looking forward to a quicker process in the future.
I am not 100% sure what I am even trying to accomplish with this post aside from articulating my excitement but I would recommend canning to everyone and anyone who wants strive towards food security.
