so I grabbed two smaller squash so they cook faster, a onion, tomato, 1 pound of 50-60 shrimp, butter, garlic powder and lemons

cut open the squash

cleaned em out

and threw them into our woodstove oven

so after being in the oven for a hour, I chopped the tomatoes and onions

I added some butter to my pan

I dumped in the onions and seasoned with pepper and garlic powder

I dumped in the shrimp and squeezed three lemons over them

and covered it to simmer

I grabbed the squash

great tip on halving them, they cooked much better and shredded much eaiser

the shrimp was done

so I poured it over the squash and tossed the tomatoes on top and added some more pepper

damn it was good

again, feel quite full without being bloated, have quite a bit left over for lunch tomorrow, I'm really surprised how much my wife liked it

Shrimp - Raw, 15 oz

Squash (Atkins Net Carbs) - Spaghetti Baked, 8 cup

We dont eat alot of squash, basically only zucchini in the summer. What kind of squash do you use for this? Do you know of an heirloom variety if I wanted to grow some?
