So today I decided to try and make some beef stew without potatoes or flour

I grabbed some supplies

I chopped up the carrots, squash and peppers and threw into the crockpot

added some stew meat

chopped up the garlic and threw that on there

seasoned with sea salt, pepper a beef broth and set on high

will let it cook for 4 hours, then throw in the coconut milk to thicken it up

*fingers crossed*

so there didn't look like there was enough broth so I added another one

big mistake, there was to much and I was concerned about adding coconut milk, so i added some coconut flour

and stirred it up and let it cook for another hour

did a taste test

a little to thick, so ended up adding the coconut milk and it thinned it right out

it was much better, I give it a 6 though, I would make again but with just one beef broth and the milk and skip the flour, it has a weird texture to it
