So my wife wanted to have roasted chicken today, so she pulled one of our mini butterballs out of the freezer. After letting it sit in the fridge over night it was thawed enough so I grabbed my dutch oven
the chicken barely fit into the oven
I coated with old bay, red pepper flakes and stuck some butter under each wing
I quit drinking on the 1st (doesn't really work well with weight loss), but I still had a couple cans of my secret sauce in the fridge, so I poured a can into the oven
and put it into the wood stove
I let it cook for 4 hours stoking to woodstove between 325-350, during that time, I had chopped some sweet potatoes and drizzled with honey and butter and baked that for 1.5 hours
it was good and simple
