So since the new pigs should be here this weekend, we needed to start clearing out some of the leftovers in the freezer
- Pound of Bacon
- Two pounds of Shrimp
- Whole Wheat Penne Pasta
- Two Lemons
- Two Tomatoes
- One Onion
- Parmesan Cheese
- Cup of White Wine
- Butter
So I started by cooking off the Bacon.
I drained off the excess grease and tossed in the shrimp.
Chopped up the Onion and added that to saute.
I squeezed in the lemons, added the wine and 3-4 tablespoons of butter.
After letting that all simmer together I tossed it in with the penne pasta and garnished with tomatoes and parmesan cheese.
It wasn't to bad, next time I will probably cut the bacon back to less than half a pound, it was a little overpowering, but you can never have to much bacon, right?
