In our continued effort to only eat out of our pantry, fresh fruits, vegetables and nothing processed, I wanted to throw something quick and simple together yesterday

So I dumped a pound of white beans in the crockpot

and 2 cups of diced onions

I added 6 cups of water and salt and pepper

I had asked my wife to grab a ham steak out of the freezer the night before while I was at work so it could thaw, well I went and grabbed it out of the fridge and realized she had grabbed one of our unsmoked hams, not a smoked one, oh well into the pot it went

I set it on low and left it alone for 4 hours, I pulled the lid and stirred up the pot

two hours later I pulled out the ham steak and shredded up the meat and threw it back into the pot

and two hours later it was ready to eat

I guess this would be good for a paleo diet, there was enough to feed 3 grown adults with leftovers, so it would be a cheap meal to eat throughout the week for a single person for about 5 dollars, gonna make sure to use a smoked ham next time to give some more flavoring

I've lost 14 pounds the last 2 weeks eating this way, will be interesting to see how much more I lose

i'd add a nice side of kale or other grees to that and you've got yourself a healthy meal

true, probably be good with adding some collard greens for the last hour as well
