We always have dutch oven cook offs (desert) on cub scout campouts. Using coals from the campfire hasn't worked for me so I'm strictly using briquettes from now on. I've heard a formula (that I can' remember now) for the coals. Something like you take the inches of the DO, and put that many coals on the bottom and twice as many on top.

I've used this recipe several times with mixed results.

Awesome KVR

ET the coal recipe you stated was the same as what I use. Its just a starting point. When using wood coals from a fire it requires almost constant attention to keep temps right. I use the "keyhole" method I learned horse packing. Basically its a second smaller fire ring (maybe 3 inches larger around than your DO) just off the main fire ring, connected by a channel maybe 6" wide & <1' long. You just keep scooping coals from the main fire to the top & bottom of your DO. Its a pain & goes against LNT principles, but works well.

Im going to try the coffee cake recipe!
