I really like them cooked. They are really popular in fried potatoes around here. I personally like wrapping them around a chicken breast, then wrapping that in bacon and grilling. The cooked ramps add an oniony, mushroomy kind of flavor to the meat. I've seen people dry them out and sprinkle on stuff as a seasoning as well.
