I just received a phone call out of the blue from a gent who owns a large restaurant that he leases in a very heavily trafficked area, lot's of hotels, right near the airport ect. He also has his own business right next to the restaurant which he uses the restaurant to cater for. He has had several people in there that don't have a clue about how to run a restaurant and he has been in my place several times and one of my employees told him my background so he decided to call me and see if I would be interested. Not sure if I'm ready to take on something that large right now. My wife and I had been approached by others in the past but we declined due to the fact of our daughter being young and I had worked 7 days a week for the first 2.5 years. Not sure I want to get back into that.

I actually agree with Moro. That way you have control over the amount of time and effort you are putting in and limits are set to protect yourself. You would have a finite start and end date. If you want to continue the role when the contract is finished, you can always extend it.
your post only lists cons. You don't mention any pros.
Either there are no pros or you've already made your decision.
positives would be the money and it might be a good path for our exit strategy that we still haven't totally defined yet
