I would like to get something that I can take fishing and also hunting. I know that the Go Pro is often mentioned and that would be cool.

It would be nice to set it to record and then go back and edit down to just get the "action" scenes (landing a fish, etc).

Any recommendations?

Gotta recommend the GoPro. They offer a wifi remote now so you can mount the camera and control it from the remote. A fishing buddy has the remote and the lcd touch bacpac for his and it is sweet.
