Yeah, with eggs I usually just turn them into a powder and use them as a thickener or an additive

I have some eggs that I have been storing for 2 years now. Had one last night and yup still OK.

Used coconut oil. Taste of them is not for everyone but in a pinch they do.

what extra precautions do you take for storage down there due to the humidity?

The coconut oil goes on over the bloom of the egg. Not much better of a seal then that. Must be fresh eggs since the stores clean off the bloom to decrease shelf life, otherwise eggs could last 2-3 months in proper conditions.

Just a matter of keeping them dry, people store eggs on the counter top here. Never met anyone who puts them in the fridge.

I think it is 50-75 F, is ideal for storage. Longest I have heard you can get from coconut oil is around 15 years. Wanted to try and reach ten but I doubt they will let them on the plane.

Those eggs are my version of a having a bonsai tree for now. I really do not worry much about storage conditions. You can smell the rot if they go. I still cook them before eating.

They had a method of salting eggs in Morac that they claimed they could get 25 years from a egg.
