Other things to throw in the boil are heads of garlic cut across the cloves, smoked sausage, mushrooms, hot dogs...I've even seen people put cans of artichoke hearts, corn, string beans(remove the label and poke holes/drain first).

The strangest idea I ever saw was a sheepshead filet that was left on the skin. Thought it would be a disaster, but it came out tasting like crab meat.

The cook put it in on top of the crawfish after the water had reached a boil, skin side up.

Sheepshead porgy is actually very good eating. But I always had better luck using a boning knife to clean them rather than a fillet knife
