Here is a homemade pierogi recipe, my polish side is showing through on this one 🙂 I gathered some supplies, those are the last of my potatoes, we need to grow a larger crop this year.
I got the potatoes boiling in water
and took 3 cups of flour
and added a cup of yogurt, need to make some more
and one egg and tsp of salt
I mixed it well
and then poured in a cup of water
and formed a dough ball
while that rested for a half hour, I chopped up half a onion
and set that in a pot with butter and pepper
I let it caramelize
the potatoes were done boiling,
so I used a slotted spoon to transfer them into the onion pan, I saved the potato water and let it continue to boil
I added the last of my cream cheese, about 8 oz or so I guess
and mashed it with a spoon to give it texture
I cut off a piece of dough and laid it on my floured cutting board, rolling it out
I used a coffee cup to cut out circles
and spooned some of the filling onto each one
I took a egg white and brushed around the edge of the dough
and folded it over and used a fork to seal the edges
I moved them into the potato water I still had boiling until they float which takes a couple minutes
and drained them
and moved them directly into a saute pan with melted butter and browned and crisped them up
a little salt, pepper and bacon jam, and you’re good to go
We make ours similar to this but instead of yogurt we use sour cream in the dough.
