So since I made a crap load of cheese today I decided to make lasagna from scratch with it. I had dehydrated a bunch of my tomatoes and still had some in the pantry and decided to use those to make my sauce
so I dumped 3 cups of tomatoes into 6 cups of water
I wanted to show how to use food storage to make a good fresh meal, so I used powdered garlic, dried mined onion and red pepper flakes
I dumped in a cup of minced onions
3 tablespoons of powdered garlic
and several dashes of red pepper flakes
I also had dehydrated some green peppers
so I dumped in a 1/3 of a cup of them
stirred well and set it on to simmer
after letting it simmer and stirring for 3 hours, I broke out the hand mixer
I left it a little chunky and added a little sugar to cut down on the acidity
I dropped in a pound of our sweet sausage we had made from the pigs
time to make the fresh pasta sheets, I grabbed some all purpose flour, alt, a little milk and 3 eggs from our chickens
start out by putting 2 cups into the bottom of a bowl and creating a pocket in the middle of the flour
crack the 3 eggs into the pocket
put a 1/2 tsp of salt on the eggs and whisk the eggs up
as your whisking, slowly work outwards pulling flour in a little at a time into the eggs, until you create a dough ball
flour up your cutting board good and dump the ball of dough onto it
proceed to knead the dough like bread dough for about 5 minutes, sprinkle with milk if it is to dry
divide the dough into 4 balls
sprinkle the cutting board with flour and flour up your rolling pin and start going to town, flour is your friend, you can not over flour, I repeat, flour is your friend, if you flip the dough over, flour the top first before you do, flour is your friend!
I moved the dough sheet into the pan
and grabbed my pork sauce off the stove and the two bowls of cheese curds I had made earlier, I had a nother sheet in the background ready to go
I put on a layer of sauce
then a layer of cheese curd
and proceeded to layer 3 more sheets of pasta and sauce and cheese curds
I stuck it into the oven at 375 for 1 hour and 15 minutes
