Here is a pretty simple broccoli and cheese soup recipe we like to make that is very paleo friendly. What makes it paleo friendly you ask?
Lack of flour and potatoes for thickening. So I gathered some supplies.
I started melting a stick of butter.
And chopped up a onion, I didn’t even cry!
I dumped that in with the butter to let them saute.
and added some pepper.
I let that saute for about 10 minutes till the onions were done sweating and were almost translucent.
I poured in four cups of chicken stock, for a slightly thicker soup, cut that back to two.
I added two cups of heavy cream.
Since I wanted to thicken it some what I grabbed several sweet potatoes.
And peeled and chopped them up.
I dumped that into the pot and let it simmer for about 25 minutes, stirring often.
When the sweet potatoes were soft, I chopped up three heads of broccoloi and dumped that into the pot.
After letting it simmer for about ten more minutes the broccoli was starting to soften.
So I killed the heat and dumped in the cheddar cheese.
After letting it rest for 5 minutes for the cheese to melt, it was time to eat!
It was pretty darn good.
