we want to raise some for the first time this year, we figure we can raise one for thanksgiving and one for christmas. I have been told by two different people that if I want 2 to raise 4 because I will lose half. That can't be right can it? I don't want to end up with 4 birds!

Not sure about raising your own, but I did work on a turkey farm (a few thousand so it was commercial) when I was a teenager. Dead turkey were pretty common but no where near 50% in that setting. The weak/ill will often get cannibalized.
Turkey can get mean as well.

Yeah they are mean birds.
I had my Ka Bar too, thought for sure I was going to have to kill it.
Get four. You can always freeze one or two and trade them if need be.

I carried a mini bat around with me. A well placed shot to the skull = turkey for supper that night. That was only in extreme cases when there really wasn't any other options unless you wanted to end up bloody.
