I have canned and froze cooked beet tops, skins and root pieces to be used later for this. Potato peels, broccoli stems, celery trimmings, NO ONION!!!, brussel sprout leaves, acorn squash peels, yam peels etc. etc. seem to fill up my container year round .
And not to gross anyone out, but shoveling the dog poo around the base of our fruit trees helps to discourage critters (mice/rabbits nibbling at bark) and fertilize the tree too. Nothing goes to waste if we can help it.
