My wife wanted something different for dinner than our normal fare; I said okay then, we need some spinach and cheese.

She responded by saying, "I hate spinach."

Well. you wanted something different.

So I gathered some supplies.

 

  1. 4 cups of mozzarella cheese.
  2. A stick of butter.
  3. A block of cream cheese.
  4. A pint of heavy cream.
  5. Salt, garlic and pepper.
  6. Home made pasta.
  7. 3 Chicken breasts.
  8. 4 cups of mozzarella cheese.
  9. 5 ounces of baby spinach.

We have so many recipe posts that include home made pasta, it was getting redundant posting the method over and over. So I decided to make a post on making pasta and reference that for those that haven't seen it before. That way it keeps the threads shorter on pics and posting.

I started by cubing the chicken breasts and setting them on the stove to cook. At the same time, I turned on the pasta water.

The chicken takes only 10 minutes to cook. There is no reason to be concerned about pieces that are not cooked thoroughly; they will finish cooking in the oven.

By this time the pasta water will be boiling; go ahead and add your pasta to it.

Put the butter and heavy cream in a medium sauce; sett the stove top to low.

When the butter is all melted; cube the cream cheese and add it to the saucepan.

Add the mozzarella and stir the mixture well. You do not want it scorching on the bottom of your pan.

Add the baby spinach to your saucepan; pressing it down into the mixture.

Start stirring; the spinach will quickly wilt and incorporate in with your sauce.

At this point you could put this in a shallow baking dish, sprinkle with Parmesan cheese and stick it in the oven. It makes an excellent spinach dip.

Instead we poured the cooked chicken into the saucepan and added the seasonings to taste.

Pour your drained pasta into a large baking pan; add the sauce, mix it well and sprinkle with Parmesan.

Put it in a 375 degrees heated oven for 35-40 minutes, or until golden brown.

My wife loved it for the record; she had two bowls for dinner and a bowl for lunch today.

Our moms were learned to cook in the era of "boil the s#%^$ out of everything.  So whenever someone says "I dont like that vegetable" I say "hold on, try this."
