Im really starting to think about doing this.  Spending the $80-100 to get a deer butchered and not being able to take every ounce of meat that you want is starting to bug me.

I started processing my own deer after I took a buck well over 200# to a processor and got back far less meat than I thought I should have.

yeah, I'm never happy when we get our pigs back from the butcher, I'm seriously debating doing the cows ourselves now that my brother is up here, he was a meat cutter for years

Watched this a few days ago while going down the youtube rabbithole. Really got a lot out of it. I someday hope to be as efficient and confident with a knife as that fella. I agonize over everything and still do a crappy job.

 

THIS YEAR WILL BE DIFFERENT!!!!

 

 

 

 

 

If I can actually get a critter on the ground, skunked so far this bow season. Almost over then rifle begins and I like my chances this year for both deer and elk during rifle season, a friend turned me on to some pretty good country I hadn't been in before that's pretty close to the compound. I have tags for muley, white tail, and elk (all antlered) this year. If it has hoof & horns, its going in my freezer dammit!

Funny, I was staying up too late last night researching how to preserve hides "hair on". Never done it myself, I remember reading Tom Browns books 20 years ago and always wanting to do it.

 

You gonna start with a small critter or something with horns?
