Here is a paleo friendly chicken carbonara. I love carbonara, almost as much as shrimp scampi. For those that are trying to cut gluten from your diet here is a simple recipe that doesn’t take a lot of time to whip up.
So I gathered some supplies, 2 lemons, 2 eggs, 1 pound of fresh bacon, diced chicken, peppers and onions.
oh and spaghetti squash, can’t forget that
So I cut the squash in half, cleaned it and threw it into theĀ wood stove. The clean out goes to the chickens as a treat.
I set the bacon into a saute pan, probably should have thawed it earlier. Doh!
But it cooked up good, for those that are thinking of raising pigs, do it, you can’t beat fresh bacon and ham.
After cooking the squash for about 90 minutes, it was done, you can see the strands starting to separate on their own.
I tossed the peppers and onions in the pan drippings, I had drained about ninety percent but kept some for cooking purposes.
Five minutes later I tossed in the chicken.
And added the bacon I had chopped up after cooling.
I added three tablespoons of butter and squeezed the juice of the lemons into the pan.
When that was all melted and a nice little sauce had formed, I dumped the pan contents into a bowl I had shredded the spaghetti squash into
After mixing quickly so it didn’t cool down to much, I cracked the two eggs into the bowl as a thickener
Some shaker cheese and we were good to go.
For people with sodium concerns, I would cut back on the bacon.
